Prepare glass

Fill a highball or Collins glass with ice until nearly full (about 1 cup of ice).

Add lime

Squeeze 1/2 oz (about 1/2 lime) fresh lime juice over the ice. Drop the squeezed lime wedge into the glass for extra aroma if desired.

Top with ginger beer

Pour 4 oz of cold ginger beer gently over the ice and lime juice. Pour slowly to preserve carbonation.

Float the rum

Carefully pour 2 oz dark rum over the back of a bar spoon or down the inside of the glass so the rum floats on top of the ginger beer, creating the classic layered look. If you don't mind mixing, you can simply pour the rum on top.

Garnish & optional bitters

Garnish with a lime wedge or wheel on the rim. If using, add 1–2 dashes of Angostura bitters on top for aromatic complexity or a piece of candied ginger on a pick.

Serve

Serve with a straw or stirring stick so the guest can mix to taste. Encourage stirring to combine rum and ginger beer before drinking, or sip layered for visual effect.
