Prepare aromatics
Finely mince the 2 garlic cloves and chop the anchovy fillets until they form a paste. You can sprinkle a pinch of salt on the garlic and mash with the side of a knife to help form a paste.
Combine base ingredients
In a medium bowl, whisk together 1 cup mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, and 2 tablespoons fresh lemon juice until smooth.
Add anchovy-garlic paste
Stir the minced garlic and chopped anchovies (or anchovy paste) into the mayonnaise mixture until evenly distributed.
Finish dressing
Whisk in 3 tablespoons olive oil slowly to emulsify. Add 1 tablespoon grated Parmesan and 1/2 teaspoon freshly ground black pepper. Taste and adjust: add a little more lemon juice for brightness, more Worcestershire or anchovy for umami, or a pinch of salt if needed.

Prepare lettuce
Trim the root end of the 2 romaine heads, remove any damaged outer leaves, and separate into leaves. Rinse under cold water, then dry thoroughly using a salad spinner or clean kitchen towels. Dry leaves help the dressing adhere.
Tear and season lettuce
Tear the romaine leaves into bite-sized pieces and place them in a large salad bowl. Sprinkle 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper over the leaves, then toss gently to distribute.
Dress the salad
Add about three-quarters of the prepared dressing to the lettuce (start with less; you can add more to taste). Toss the leaves gently but thoroughly so each piece is lightly coated. If using chicken, add the sliced cooked chicken now and toss to combine.
Add croutons and cheese
Scatter 2 cups croutons over the dressed lettuce and add 1 cup grated Parmesan. Toss once more briefly to combine and distribute croutons and cheese without crushing them.
Adjust and finish
Taste a leaf and adjust seasoning: add more dressing, lemon juice, salt, or pepper as desired. Quarter the remaining lemon and squeeze a little extra juice over the salad if you like more acidity.
Serve
Transfer the salad to individual plates or serve family-style. Garnish with extra shaved Parmesan and a final crack of black pepper. Serve immediately so croutons remain crisp.
