Dry shake (if using egg white)
If using egg white for a silky foam, add the egg white, gin, creme de violette, dry vermouth, fresh lemon juice, and simple syrup to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and create foam.
Wet shake
Open the shaker, add a generous handful of ice (about 1 cup). Seal and shake vigorously for 10–15 seconds until the shaker is very cold and well-chilled. If you did not use egg white, combine all liquid ingredients with ice and shake for 10–15 seconds.
Strain and serve
Dump the ice/water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer (especially important if you used egg white) to achieve a smooth texture.
Garnish
Express a lemon twist over the drink to release oils and drop it in, or garnish with a maraschino cherry. Serve immediately.
Estimated color and balance: the creme de violette will give the cocktail a pale to medium blue-lavender hue; adjust sweetness by increasing or decreasing simple syrup by 1/8 oz increments.
