Make a quick rustic loaf (or use store-bought)
In a large bowl combine warm water (about 105–115°F / 40–46°C) and active dry yeast. Let sit 5 minutes until foamy. Add 2 tablespoons extra-virgin olive oil, salt, and flour. Stir until a shaggy dough forms. Turn onto a lightly floured surface and knead 6–8 minutes until smooth and slightly elastic. Place in a lightly oiled bowl, cover, and let rise in a warm place until doubled, about 1 to 1¼ hours. (If using store-bought baguette or ciabatta, skip to slicing.)

Punch down the risen dough and shape into a small loaf. Let rest 20 minutes. Preheat oven to 425°F (220°C). Slash the top and bake on a parchment-lined sheet 25–30 minutes until golden and hollow-sounding. Cool at least 20 minutes before slicing.

Slice the loaf into ¾-inch thick slices. Brush both sides lightly with the 2 tablespoons of olive oil. Arrange slices on a baking sheet and toast under broiler or in a 425°F oven 5–7 minutes total, flipping halfway, until crisp and golden. Remove and rub one side of each warm slice lightly with a halved garlic clove for subtle garlic flavor.

Prepare tomatoes: core and chop tomatoes into small ¼–½-inch dice. Place chopped tomatoes in a medium bowl and gently drain any excess liquid after 5–10 minutes to avoid soggy bread. Reserve a tablespoon of the tomato juice if desired for loosened texture.

Add the minced garlic, sliced basil, 3 tablespoons extra-virgin olive oil, lemon juice, sea salt, and black pepper to the drained tomatoes. Gently toss to combine. Taste and adjust seasoning — add more salt or a pinch of sugar if tomatoes are too acidic. Let the mixture rest 10–15 minutes at room temperature for flavors to meld.
Balsamic glaze and finishing

Make the balsamic glaze: pour 1 cup balsamic vinegar into a small saucepan, stir in 2 tablespoons granulated sugar, and bring to a gentle simmer over medium-low heat. Reduce heat to low and simmer, stirring occasionally, until reduced by about half and syrupy, about 10–15 minutes. It will thicken more as it cools. Remove from heat and let cool to room temperature.

Assemble bruschetta: spoon a generous tablespoon (or more) of the tomato topping onto each toasted bread slice, allowing excess liquid to drain away before plating. If using, top with small shavings of Parmesan or torn pieces of fresh mozzarella for creaminess.

Finish with a light drizzle of the cooled balsamic glaze over each bruschetta and sprinkle a small pinch (about 1/16–1/8 tsp) of sea salt across the assembled pieces to enhance flavor. Serve immediately so bread stays crisp.
