Prepare beans

If using dried rajma: sort and rinse 2 cups dried beans, then soak in plenty of water for 8 hours or overnight. Drain, add to a pressure cooker with 4–5 cups fresh water and 1 bay leaf; cook 5–7 whistles (about 20–25 minutes) until soft but not falling apart. If using canned beans: drain and rinse 2 cups canned beans and skip pressure-cooking; reserve 1/2 cup cooking/liquid or water for the curry.

Sauté aromatics

Heat 2 tbs oil or ghee in a heavy skillet or medium saucepan over medium heat. Add 1 tsp cumin seeds and let them sizzle 10–15 seconds. Add the finely chopped onion and sauté 6–8 minutes until golden brown, stirring frequently to avoid burning. Add grated ginger (1 tbs), minced garlic (3 cloves), and slit green chili; cook 1–2 minutes until fragrant.

Cook tomato base and spices

Add 1.5 cups chopped or pureed tomatoes to the pan. Cook 6–8 minutes until the tomato reduces and oil separates slightly. Stir in 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp turmeric powder, 1 tsp Kashmiri or regular chili powder, and 1.5 tsp salt. Cook 2–3 minutes to bloom the spices. If the mixture looks too dry, add 2–3 tbs water.

Combine beans and simmer

Add the cooked/drained rajma and about 1/2 to 1 cup of the bean cooking liquid (or water if using canned) to the tomato-spice mixture. Gently mash a few beans with the back of a spoon to thicken the gravy. Bring to a gentle simmer, reduce heat to low, and simmer uncovered for 12–15 minutes, stirring occasionally so it doesn't stick. Add up to 1/2 tsp sugar or jaggery to balance acidity if desired.

Finish curry

Stir in 1/2 tsp garam masala and 1 tsp crushed kasuri methi (if using). Adjust salt to taste (add more if needed). Finish with 1 tsp lemon juice and 1/4 cup chopped fresh cilantro. Keep the curry at a slightly saucy consistency so it pairs well with rice (add a little water if it becomes too thick).

Basmati Rice

Rinse 1 cup basmati rice under cold water until the water runs clear to remove excess starch. Drain and let sit 10–15 minutes while you prepare other components.

In a medium saucepan bring 1.5 cups water to a boil with 1/4 tsp salt and 1/2 tsp oil or butter. Add the drained rice, stir once to prevent sticking, reduce heat to low, cover tightly and simmer 12–15 minutes until water is absorbed and rice is tender.

Turn off heat and let rice rest, covered, for 5–8 minutes. Fluff gently with a fork before serving.

Assemble & Serve

Portion: For a 24 oz (approx. 3 cup) rice bowl, place about 1 cup cooked basmati rice in the container base (warm). Ladle about 1 to 1 1/4 cups rajma curry over the rice, ensuring a balance of gravy and beans. Reserve some gravy if you prefer saucier bowls.

Garnish: Top with chopped cilantro, a squeeze of lemon, and optional sliced red onion or a dollop (1/2 cup) of yogurt or raita on the side. Provide lemon wedges for extra brightness.

Storage and reheating: Cool to room temperature before sealing container. Refrigerate up to 3–4 days. To reheat, microwave covered for 2–3 minutes stirring halfway, or reheat in a saucepan until warmed through, adding a splash of water if needed to loosen the gravy.
