Rinse and Cook Dal

Rinse the lentils under cold water until the water runs clear to remove excess starch. Drain. In a medium pot, combine the rinsed lentils, 4 cups vegetable broth (or water), turmeric, and 1 tsp salt. Bring to a boil over medium-high heat, then reduce to a gentle simmer. Skim any foam that forms on top. Simmer, partially covered, for 15–20 minutes for red lentils (20–25 minutes for split moong) until the lentils are very soft and beginning to break down.

If the soup becomes too thick while cooking, add 1/2 cup water or broth at a time to reach a smooth, slightly creamy soup consistency. Once lentils are soft, use a potato masher or immersion blender to pulse 2–3 times to slightly thicken and smooth the texture—leave some whole lentil bits for body. Taste and adjust salt.

Prepare Tadka (Tempering)

While the dal is simmering, heat a separate medium skillet or small saucepan over medium heat. Add the oil or ghee. When hot, add mustard seeds and let them pop (about 20–30 seconds). Add cumin seeds and let them sizzle for 10 seconds.

Add the chopped onion and a pinch of salt. Sauté until translucent and beginning to brown at the edges, about 5–7 minutes. Add minced garlic, grated ginger, and green chili (if using). Sauté for 1–2 minutes until fragrant.

Add diced tomato and optional diced carrot. Cook until the tomato softens and releases juices and the carrot begins to soften, about 4–5 minutes. Stir in ground coriander, ground cumin, and red chili powder; cook 30–60 seconds to bloom the spices.

If using spinach or kale, stir it into the aromatics and cook until wilted, about 1–2 minutes. Turn off heat and set the tadka mixture aside.

Combine & Finish

When the dal is soft and mostly broken down, stir the prepared tadka (aromatics and vegetables) into the pot of cooked lentils. Mix thoroughly and bring back to a gentle simmer for 3–5 minutes so the flavors meld.

Taste and adjust seasoning: add remaining 1/2 tsp salt if needed, black pepper, and lemon juice. If the soup is too thick, add up to 1 cup extra broth or water to reach desired consistency and simmer 1–2 minutes.

Turn off the heat. Stir in chopped cilantro. Let rest for 2 minutes so the flavors settle.

Serve

Ladle the dal soup into bowls. Add a dollop of plain or coconut yogurt if desired, sprinkle toasted cumin seeds or crushed papad, and garnish with extra cilantro leaves. Serve hot with crusty bread, rice, or naan.
