Wash and dry

Wash the okra thoroughly under running water. Pat completely dry with a kitchen towel or air-dry for 20–30 minutes. Ensuring the okra is dry prevents sliminess while cooking.

Trim and slice

Trim off the stem tips without cutting into the pod. Slice the okra into 1/2 inch (1.5 cm) pieces. If pods are very slimy, you can cut lengthwise but the classic Bhindi Do Pyaaza uses rounds.

Marinate

Place the sliced okra in a bowl, add 1 tsp salt and 1 tbs lime/lemon juice. Toss to coat and let sit 10 minutes. This helps reduce slime and seasons the vegetable.

Shallow-fry or sauté till dry

Heat 3 tbs oil in a large nonstick skillet or heavy pan over medium-high heat. When hot, add the okra in a single layer (cook in two batches if needed). Spread them so they contact the pan, and let them cook undisturbed for 3–4 minutes until the bottom browns. Stir and continue cooking, stirring occasionally, until okra is lightly browned and mostly dry, about 8–10 minutes total. Remove to a plate and set aside.

Prepare onions and aromatics

Thinly slice one onion for the first stage (about 1 cup packed). Slice the second onion into thicker half-moons to add later for texture. Slit green chilies and chop ginger and garlic.

Temper and sauté

In the same skillet, heat 2 tbs oil over medium heat. Add 1 tsp cumin seeds and let them sizzle for 15–20 seconds until fragrant. Add the thinly sliced onion (first portion) and a pinch of salt. Sauté, stirring, until the onions become translucent and just beginning to brown at the edges, about 6–8 minutes.

Add aromatics and spices

Add the minced garlic, chopped/julienned ginger and slit green chilies to the pan. Sauté 1 minute until fragrant. Then add turmeric, red chili powder and coriander powder; cook the spices for 30–45 seconds, stirring constantly to bloom their flavor but not burn them.

Combine okra and onions

Return the browned okra to the pan and stir gently to combine with the onion-spice mixture. Add the second portion of thicker-sliced onion so you have layers of soft and slightly crunchy onion (this is the 'Do Pyaaza' — two-onion) and continue to cook over medium heat, stirring occasionally, for 6–8 minutes so flavors meld and the second onion softens but retains some bite.

Finish with tang and seasoning

Sprinkle amchur powder (or 1/2 tsp tamarind paste dissolved in 1 tbs water), garam masala and additional 1 tsp salt (adjust to taste). Gently toss and cook another 2 minutes. Taste and adjust seasoning. If the mixture seems dry, add 1–2 tbs water and cook a minute more to incorporate.

Garnish and rest

Turn off heat. Stir in chopped coriander leaves. Let the bhindi rest for 3–5 minutes before serving so the flavors settle.
