Calamari and Beef Ragout

Prepare the Calamari

Clean the calamari and slice it into thin rings. Pat them dry with a paper towel and season with black pepper and a pinch of salt.

Cook the Beef Ragout

In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are softened.

Add Beef

Add the beef to the pot and brown on all sides. Stir in the tomato paste and cook for an additional 2 minutes.

Simmer the Ragout

Pour in the beef broth, bring to a simmer, and reduce the heat to low. Cover and cook for about 1.5 hours or until the beef is tender.

Fry the Calamari

In a separate pan, heat some olive oil over medium-high heat. Fry the calamari rings for about 2-3 minutes until golden brown. Do not overcrowd the pan.

Serve

Plate the beef ragout and top with the fried calamari. Crumble goat cheese on top and garnish with fresh parsley.
