Cheese Making Process
Step 2: Add Culture
Sprinkle the cheese culture over the surface of the milk. Let it sit for about 30 minutes to allow the cultures to activate.
Step 3: Add Rennet
Dilute the rennet in a small amount of cool, non-chlorinated water. Add it to the milk, stirring gently for about 30 seconds. Let the mixture sit undisturbed for 30-45 minutes until it sets.
Step 4: Cut Curd
Once the curd has set, cut it into small cubes using a long knife. Allow the curds to rest for 5-10 minutes.
Step 5: Cook the Curd
Slowly heat the curds to 54°C (130°F) over the course of 30 minutes, stirring gently. Maintain this temperature for another 30 minutes.
Step 6: Drain the Curds
Pour the curds into a cheesecloth-lined colander to drain the whey. Gather the corners of the cheesecloth and hang it to drain further for about an hour.
Step 7: Add Salt and Mold
Transfer the curds into a mixing bowl, add salt and Swiss cheese mold, and mix thoroughly.
Step 8: Mold the Cheese
Pack the curd mixture into a cheese mold, pressing firmly to eliminate air pockets. Cover and let it sit at room temperature for 24 hours.
Step 9: Age the Cheese
Remove the cheese from the mold and place it in a cool, humid environment to age for at least 3 months, flipping it every couple of weeks.
