Prepare the crab
Clean and portion
Rinse the whole crab thoroughly under cold water. Using a sharp knife or cleaver, remove the top shell and gills, then cut the body into halves or quarters depending on size. Crack the claws slightly so marinade can penetrate. Pat pieces dry with paper towels.
In a large bowl, combine salt (1.5 tsp), turmeric (1 tsp), freshly ground black pepper (1 tsp), ginger paste (1 tbs), garlic paste (1 tbs) and lemon juice (1 tbs). Rub this mixture onto all crab pieces, making sure the marinade gets into the cracked joints. Set aside to marinate for 20–30 minutes.
Coating and aromatics
While the crab marinates, mix the coating: in a shallow bowl combine all-purpose flour (3 tbs), rice flour (3 tbs) and cornstarch (1 tbs) with red chili powder (1 tsp) and a pinch of salt. This dry mix will give a crisp exterior.
Prepare aromatics: thinly slice garlic (6 cloves) and shallots (4 small). Slit green chilies (2) and pick through curry leaves (1 tbs) to remove any stems.
Frying the crab
Heat oil (about 500 ml) in a deep skillet or wok over medium-high heat. The oil should reach about 180°C (350°F) — a piece of bread should brown in ~30 seconds. If you don't have a thermometer, test by dropping a pinch of the flour mix: it should sizzle and rise to the surface immediately.
Dredge each marinated crab piece in the dry flour-rice flour-starch mixture, pressing lightly so the coating adheres. Shake off excess.
Carefully lower crab pieces into the hot oil in batches (do not overcrowd). Fry each batch for 6–8 minutes, turning occasionally, until the coating is golden brown and the meat is cooked through. Larger pieces or claws may take a little longer. Remove with a slotted spoon and drain on a wire rack or paper towels.
Toss with aromatics and finish
Discard excess oil from the pan leaving about 2 tablespoons. Reduce heat to medium. Add sliced garlic and shallots and fry briefly until golden and fragrant (about 1–2 minutes). Add slit green chilies and curry leaves and stir for 20–30 seconds until they crisp.
Return the fried crab pieces to the pan and toss gently to coat with the aromatic mixture. Sprinkle garam masala (1/2 tsp), chili flakes (1/2 tsp, if using) and adjust salt if needed. Toss for another 1 minute so spices cling to the crab and aromatics adhere to the surface.
Turn off heat. Sprinkle chopped fresh coriander (2 tbs) and a light dusting of chaat masala (1/2 tsp) if using. Squeeze lemon over the crab to brighten flavors.
Serve
Transfer the Kakka fry to a serving platter, garnish with remaining coriander and lemon wedges (4). Serve immediately while hot and crisp, accompanied by steamed rice or as an appetizer.
