Clean and prepare fish

Rinse the chala/mathi under cold running water. If not already done, remove heads (optional), gut and remove scales and gills. Pat each fish dry inside and out with paper towels. Make 2 shallow diagonal slashes on each side of the fish to allow marinade to penetrate.

Marinate

In a mixing bowl combine turmeric powder, salt, lime juice, ginger paste and garlic paste. Mix into a smooth paste. Rub the marinade thoroughly over each fish, making sure to get paste into the slashes and cavity. Cover and refrigerate for 20–30 minutes (or up to 1 hour).

Prepare coating mix

While the fish marinates, combine rice flour, semolina, chili powder, ground coriander, black pepper, cumin powder and optional garam masala in a shallow wide plate or bowl. Whisk together to make an even dry coating. The rice flour gives a crisp crust and the semolina adds crunch.

Coat the fish

Take one marinated fish at a time. Shake off any excess wet marinade but keep it moist. Dredge the fish thoroughly in the dry coating mix, pressing gently so the flour and semolina adhere into the slashes and cavities. Shake off any excess coating. Place coated fish on a tray while preparing the rest.

Heat oil

Pour oil into a deep frying pan or skillet to a depth of about 1–1.5 inches (enough for shallow to semi-deep frying). Heat over medium-high until shimmering and a small pinch of coating sizzles immediately (about 350–360°F / 175–180°C). If you don't use a thermometer, test with a small bit of the coating — it should sizzle and rise to the surface quickly.

Fry the fish

Carefully lower 3–4 fish into the hot oil without overcrowding the pan (work in batches). Fry for about 2.5–4 minutes per side, depending on fish size, until the coating is golden brown and crisp and the fish is cooked through. Use tongs or a slotted spatula to turn gently so the coating remains intact. Total frying time per batch ~5–8 minutes.

Drain and finish

Transfer fried fish to a wire rack or plate lined with paper towels to drain excess oil. Sprinkle a pinch of salt while hot, if desired. Repeat with remaining fish. For best texture, keep finished fish warm on a low oven rack (about 200°F / 95°C) while frying remaining batches.

Garnish and serve

Arrange the fried chala on a serving platter. Sprinkle chopped cilantro if using and serve immediately with lemon wedges on the side and steamed rice or as an appetizer. Enjoy while hot and crisp.
