Method
Marinated Shrimp
Prepare shrimp and marinade
Pat the shrimp dry with paper towels. In a medium bowl whisk together soy sauce, rice wine, sesame oil, lime juice, minced garlic, grated ginger, brown sugar, salt and black pepper until sugar dissolves.
Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 15–30 minutes — no longer than 45 minutes to avoid over-tenderizing the shrimp.
Wraps & Assembly
Prepare sealing slurry
Combine cornstarch and water to make a thin paste (slurry) and set beside your work area. This will act as the glue for the wrappers.
Place one spring roll wrapper on a clean work surface in diamond orientation. Place one marinated shrimp near the center, leaving room to fold. If shrimp are large, you can cut them in half lengthwise so they lie flat; if small, two per wrapper are acceptable but adjust counts.
Optional: lightly brush a small amount of oil on the wrapper to help crispness. Fold the bottom corner over the shrimp, fold in the two side corners snugly, then roll tightly toward the top corner. Dab the final edge with the cornstarch slurry and press to seal. Repeat with remaining shrimp and wrappers. Aim for 12 rolls.
Arrange finished rolls on a tray lined with parchment and chill 10 minutes in the refrigerator to firm up seams (helps prevent opening during frying).
Frying
Pour vegetable oil into a heavy-bottomed saucepan or deep skillet to a depth of about 1 to 1.5 inches (enough to half-submerge the rolls). Heat over medium-high to 350°F (175°C). If you don't have a thermometer, test with a small piece of wrapper — it should sizzle and brown slowly without burning.
Working in batches (do not crowd), carefully add rolls seam-side down into the hot oil. Fry 1.5–2 minutes per side, turning with tongs or a slotted spoon, until golden brown and crisp. Total frying time should be about 3–4 minutes depending on size. Internal shrimp should be opaque and cooked through.
Remove fried rolls to a wire rack or paper towel-lined plate to drain. Keep warm in a low oven (200°F / 95°C) if needed while you finish remaining batches.
Plum Dipping Sauce
If using fresh plums: place chopped pitted plums in a small saucepan with hoisin, rice vinegar, soy sauce, honey, grated ginger and minced garlic. Bring to a gentle simmer over medium heat and cook 6–8 minutes until plums soften and sauce thickens. Mash with a fork or use an immersion blender for a smoother texture. Add water 1 tablespoon at a time to reach desired consistency. Season with red chili flakes if using. If using bottled plum sauce, combine all ingredients in a small bowl and whisk; warm briefly if you prefer.
Taste and adjust balance — add a little more honey for sweetness, vinegar for brightness, or soy sauce for saltiness. Keep warm or serve at room temperature.
To Serve
Arrange shrimp bikini rolls on a serving platter. Sprinkle toasted sesame seeds and sliced scallions over the rolls and garnish with lime wedges.
Serve immediately with the plum dipping sauce in a small bowl alongside.
