Method
Dark Chocolate Mousse
Melt chocolate
Place chopped dark chocolate and butter in a heatproof bowl set over a simmering water bath (double boiler) or microwave in 20–30 second bursts, stirring between bursts, until smooth. Remove from heat and stir in hot espresso/coffee. Set aside to cool slightly (but not set).
Temper egg yolks
Whisk together egg yolks and 2 tbsp granulated sugar in a small bowl until pale and slightly thickened. Gradually whisk about 1–2 tablespoons of the warm melted chocolate into the yolks to temper them, then whisk the tempered yolks back into the remaining melted chocolate until fully combined. Stir in a pinch of salt. Return bowl to gently warm water for 30–60 seconds and whisk constantly until mixture is smooth and slightly thickened (optional — do not let it get hot enough to scramble). Remove and cool to lukewarm.
Whip cream and fold
Whip 1 cup heavy cream to soft peaks. Fold one-third of the whipped cream into the chocolate mixture vigorously to loosen it, then gently fold in the remaining cream in two additions using a rubber spatula until fully incorporated and no streaks remain. Be gentle to preserve airiness. Transfer the dark mousse into a piping bag or bowl and chill while preparing milk chocolate mousse, about 15–20 minutes.
Milk Chocolate Mousse
Melt milk chocolate
Warm milk chocolate with 1 tablespoon whole milk in a heatproof bowl over a double boiler or in short microwave bursts, stirring until smooth. Set aside to cool slightly.
Prepare meringue
In a clean, dry bowl, whisk egg whites to soft peaks. Gradually add 2 tablespoons granulated sugar while continuing to whisk until glossy, medium-stiff peaks form. The meringue should hold shape but still be slightly glossy.
Fold meringue into chocolate
Fold one-third of the whipped egg white mixture into the cooled milk chocolate to loosen it, then gently fold in the remaining whites in two additions until homogenous and airy. Take care not to deflate the foam. Transfer milk chocolate mousse to a separate piping bag or bowl.
Assembly
Layer the two mousses into serving glasses or bowls. Start with a spoonful or pipe of dark chocolate mousse as the bottom layer (about one-third height), then add a layer of milk chocolate mousse (one-third), repeat to create two alternating layers. Smooth the top with a small spatula or leave textured for effect.
Chill
Refrigerate assembled mousses for at least 2 hours to set and for flavors to meld. For best texture, chill up to 6 hours. If pressed for time, 45–60 minutes will firm them but be slightly softer.
White Chocolate Whipped Ganache & Garnish
Make white chocolate ganache (optional)
Heat 1 tablespoon heavy cream until just simmering and pour over chopped white chocolate. Let sit 30 seconds, then stir until shiny and smooth. Cool to room temperature, then whip briefly (30–60 seconds) to lighten slightly. Transfer to a small piping bag and pipe a small rosette on each mousse serving, or spoon a small dollop.
Finish
Dust each serving lightly with cocoa powder, top with a raspberry or chocolate shavings, and a tiny pinch of salt to enhance chocolate flavor. Serve chilled.
