Hard-boil the eggs

Place 6 large eggs in a single layer in a medium saucepan and add cold water to cover them by about 1 inch. Bring to a rolling boil over high heat. As soon as water boils, cover the pan, remove it from heat, and let eggs sit in the hot water for 10–12 minutes for firm yolks.

Cool and peel

Drain hot water and transfer eggs to an ice bath (bowl of ice water) for at least 5 minutes to stop cooking and make peeling easier. Peel the eggs gently and pat dry with paper towel.

Prepare yolk mixture

Slice eggs lengthwise and transfer yolks to a medium bowl. Mash yolks with a fork until crumbly. Add 3 tablespoons mayonnaise, 1 teaspoon creme fraiche or sour cream, 1 teaspoon Dijon mustard, 1 teaspoon smoked mustard (ground or paste), 1 teaspoon apple cider vinegar, 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, and 1 teaspoon Neighbors hot sauce. Mix until smooth and creamy. Taste and adjust seasoning — add more hot sauce for heat or more mayonnaise to mellow.

Pipe or spoon filling

Transfer yolk filling to a piping bag fitted with a star or round tip, or use a zip-top bag with a corner snipped. Pipe or spoon the filling evenly into the 6 egg white halves. Smooth or swirl the tops as desired.

Toppings & Garnish

Top each filled deviled egg with about 1/2 tablespoon (≈ 1/2–1 tbs depending on size) of finely chopped chicken cracklins, pressing lightly so they adhere to the filling.

Dot each egg with a few smoked mustard pearls (about 1/4 teaspoon per egg) or a small smear of whole-grain smoked mustard to provide briny, smoky bursts.

Drizzle a scant 1/8–1/4 teaspoon Neighbors hot sauce over each egg for color and extra heat (or serve extra on the side).

Sprinkle a light dusting of smoked paprika over the platter and garnish with microgreens or finely chopped chives if using.

Serve chilled or at cool room temperature. These are intended to be served as 3 or 6 deviled eggs — use 3 eggs (6 halves) for a small plate or 6 eggs (12 halves) if scaling up; scale ingredients proportionally.
