Method
Tea
Heat water
Bring fresh cold water to just below boiling (about 80°C / 175°F). If you don't have a thermometer, pull the kettle off heat once it reaches a steady stream and tiny bubbles start forming but before a full rolling boil.
Steep
Pour the hot water over the leaves and steep for 2 to 3 minutes. Steep 2 minutes for a lighter, floral cup; up to 3 minutes for more body. Avoid steeping longer than 3 minutes to prevent bitterness.
Strain
Remove or strain the leaves promptly into a cup or heatproof pitcher to stop extraction.
Sweetener (optional)
If you want a sweetened drink, stir 1 tsp honey or simple syrup (or 1 tsp granulated sugar) into the hot tea until dissolved. Taste and adjust sweetness: add another 1/2 tsp if desired.
Finish / Garnish
For a hot serving: pour into a warmed teacup and garnish with a jasmine blossom or a thin lemon slice if desired.
For an iced serving: let the brewed tea cool to room temperature (10–15 minutes), then fill a glass with about 1 cup of ice and pour the tea over the ice. Garnish as desired. If making iced tea ahead, cool completely and refrigerate, then serve over ice.
