Pickled fennel (quick)

Slice fennel

Trim the fennel bulb: remove stalks and core base if tough, reserve fronds. Thinly slice the bulb across the grain using a sharp knife or mandoline to yield about 1 cup packed slices.

Make brine

In a small heatproof bowl or jar, combine white wine vinegar, water, sugar, salt, and cracked black pepper. Stir until sugar and salt dissolve.

Pickle

Add sliced fennel (and chopped fronds if using) to the brine, press down to submerge, cover, and let sit at room temperature at least 15–30 minutes. For best flavor, refrigerate 1–2 hours. Drain before adding to salad; reserve a tablespoon of pickling liquid to adjust dressing if desired.

Roasted chickpeas

Prepare chickpeas

Preheat oven to 425°F (220°C). Thoroughly drain and rinse chickpeas, then spread on a clean kitchen towel or paper towels and rub gently to remove loose skins and dry them well—very dry chickpeas roast crispier.

Season

Toss the dried chickpeas in a bowl with 1 tablespoon olive oil, smoked paprika, ground cumin, kosher salt, and black pepper until evenly coated.

Roast

Spread chickpeas in a single layer on a rimmed baking sheet. Roast 25–35 minutes, shaking the pan every 8–10 minutes, until crisp and golden. Remove from oven and let cool; they will crisp further as they cool.

Lemon vinaigrette

Whisk dressing

In a small bowl or jar, combine lemon juice, Dijon mustard, honey/maple, salt, and pepper. Whisk while slowly streaming in the 4 tablespoons olive oil until emulsified. Taste and adjust acidity or seasoning; you may stir in up to 1 tablespoon reserved pickling liquid if you like a slightly tangier note.

Combine salad components

In a large salad bowl, place the 6 cups arugula. Add the drained pickled fennel, golden raisins, and 1 cup roasted chickpeas (reserve a small handful for garnish if desired).

Dress and toss

Pour about two-thirds of the lemon vinaigrette over the salad and gently toss to coat, adding more to taste. The arugula should be lightly dressed, not saturated.

Finish and serve

Taste and adjust seasoning with additional salt or pepper if needed. Sprinkle the optional grated cheese and toasted nuts, and scatter the reserved roasted chickpeas on top for crunch. Serve immediately so the chickpeas remain crisp.
