Chill a stemmed wine glass (or large white wine glass) in the freezer for 5–10 minutes so the cocktail stays bright and cool.

Make honey syrup by mixing equal parts honey and very warm water until combined; cool to room temperature. Measure 0.5 tsp for this recipe (you can scale if making multiple servings).

In a mixing glass or small shaker, place the 2 thin green apple slices and 3 mint leaves. Gently muddle once or twice—just enough to release apple aroma and mint oils without pulverizing the mint (about 3–4 light presses).

Muddle fruit and aromatics

Add the 0.5 oz fresh lemon juice, 0.25 oz fresh lime juice, 1 oz pineapple juice and 0.5 tsp honey syrup to the muddled apple and mint. Stir briefly to combine (5–8 seconds).

Add juices and sweetener

Fill the chilled wine glass with 1 cup cubed ice. Pour 1.5 cups chilled Pinot Grigio over the ice. Strain the muddled mixture through a small fine-mesh strainer or double strain into the wine glass so you get the flavored liquid without apple pulp or mint bits.

Combine with wine

Top the glass with 1 oz chilled club soda to add lift and refreshing effervescence. Gently stir once with a bar spoon to integrate (1–2 gentle turns).

Garnish with a lemon wheel on the rim and fan the remaining thin green apple slice(s) on the inside of the glass or on a pick. Optionally slap the remaining mint leaf between your palms to release aroma and tuck it into the garnish.

Serve immediately while cold. Encourage sipping slowly to appreciate the wine’s citrus and green-apple notes balanced by bright acidity and a hint of pineapple and honey.
