Gascony's leading privately-owned wine estate, this great rosé has a lovely clove spiciness and makes for an excellent dinner wine.

Place the bottle of Dom. de Pellehaut Rosé in the refrigerator for at least 2 hours before serving. Alternatively, submerge the bottle in an ice bucket filled with ice and cold water for 20–30 minutes to reach an ideal serving temperature of 8–10°C (46–50°F).

Chill the wine

Select appropriate wine glasses (Burgundy or standard rosé glasses). If desired, chill the glasses briefly in the refrigerator (10–15 minutes) or rinse with cold water and dry to keep the wine cool longer.

Prepare glassware

Use a waiter’s corkscrew to remove the foil and cork. Wipe the bottle lip with a clean cloth or napkin if necessary.

Open the bottle

Rosé typically does not require decanting. Serve directly from the bottle unless the wine has visible sediment (unlikely for this style), in which case pour gently.

Decide whether to decant (optional)

Pour about 120–150 ml (4–5 oz) per glass, filling to the widest part of the bowl so the wine can breathe and its aromas (including the described clove spiciness) can develop.

Arrange 100 g of mixed charcuterie (prosciutto, cured ham) and 100 g of soft goat cheese on a board. Slice baguette and place alongside. Offer small plates and forks for guests.

Plate charcuterie and cheese

Toss mixed greens with a light vinaigrette (olive oil, lemon or vinegar, salt, pepper) and divide into 4 portions. The bright acidity of the rosé complements the salad.

Serve salad

Encourage guests to sip the chilled rosé between bites of charcuterie, cheese and bread to appreciate its clove-tinged spice and fruit. Re-chill the bottle in the ice bucket as needed.

If not finished, re-cork the bottle (use a wine stopper if available) and store upright in the refrigerator. Consume within 3–5 days for best freshness.
