Activate yeast (if using active dry)

If using active dry yeast instead of instant, stir 2 tsp active dry yeast and 1 tsp sugar into 1/2 cup of the warm water, let sit 5–10 minutes until foamy. If using instant yeast (recommended), skip this step and mix yeast directly into the flour.

Combine dry ingredients: In a large mixing bowl or the bowl of a stand mixer fitted with a dough hook, whisk 4 cups all-purpose flour, 2 tsp instant yeast (or the activated yeast from previous step), 1 tsp sugar, and 2 tsp fine sea salt until evenly distributed.

Mix wet ingredients: In a separate bowl, combine 1 1/2 cups warm water (105–115°F / 40–46°C), 1/2 cup plain yogurt, and 2 tbsp olive oil. Whisk briefly to blend.

Combine and knead: With the mixer on low (or using a wooden spoon), pour the wet mixture into the dry ingredients. Stir until a shaggy dough forms, then knead: if using a stand mixer, knead with the dough hook on medium-low for 6–8 minutes until the dough is smooth, slightly tacky, and elastic. If kneading by hand, turn onto a lightly floured surface and knead 8–10 minutes until smooth and elastic. Add up to 2–4 tbsp more flour only if the dough is excessively sticky.

First rise: Lightly oil a large bowl with a bit of olive oil. Place the dough in the bowl, turn to coat with oil, cover tightly with plastic wrap or a damp towel, and let rise in a warm draft-free place until doubled in size, about 60–90 minutes depending on room temperature.

Deflate and rest: Gently punch down the risen dough to release gas. Transfer to a floured surface and let rest 10 minutes to relax the gluten, making it easier to divide and shape.

Divide and shape: Divide the dough into 10 equal pieces (about 80–90 g each) for medium pitas or 8 pieces for larger. Shape each piece into a smooth ball by tucking edges under and rolling on the work surface. Cover with a lightly damp towel and rest 20–30 minutes — this resting step helps them roll out thin without springing back.

Roll out: Working with one dough ball at a time on a lightly floured surface, press and roll into a circle about 1/8 to 1/4 inch (3–6 mm) thick and ~6 inches (15 cm) diameter for medium pitas. Try to keep thickness even; thin edges will puff more irregularly.

Bake / Cook

Preheat: Preheat your oven to 475°F (245°C) with a baking steel, pizza stone, or an inverted heavy baking sheet on the middle rack. Allow at least 30 minutes for the surface to get thoroughly hot. If you have a second rack, place it on the rack below and have a small metal baking pan ready to heat for steam (optional).

Dust and transfer: Lightly dust a peel or another inverted baking sheet with 2 tbsp semolina or cornmeal. Place rolled pita onto the dusted surface to transfer. Work quickly to keep dough at room temperature.

Create steam (optional): If using steam, carefully slide the shaped pita onto the preheated stone or sheet. Immediately pour 1/4 cup hot water into the preheated small metal pan on the rack below the stone to create a burst of steam, then quickly close the oven door. The steam helps the pocket form and keeps the surface flexible.

Bake time: Bake the pita for 3–5 minutes until puffed and just beginning to show lightly golden spots. For slightly more color, rotate and bake an additional 30–60 seconds, monitoring closely. Pita should puff fully into a pocket; if it does not, allow to cool slightly and press gently to open — underbaked centers can be rebaked for 30–60 seconds.

Pan method alternative: If you prefer stovetop, heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Cook each rolled pita 1–2 minutes per side: the first side will bubble and then puff; flip and cook until light golden brown spots appear. No oil is necessary. Repeat for remaining pitas.

Finish: Transfer baked pitas to a clean kitchen towel and cover them immediately to keep soft and pliable. If desired, lightly brush with 1 tbsp olive oil for sheen and softness.

Serving & Storage

Serve: Serve warm to take advantage of the pocket for fillings (falafel, shawarma, salads, spreads) or use as flatbreads. Pitas are best the day they are baked.

Store: Cool completely, then store in an airtight container or zip-top bag at room temperature for up to 2 days or refrigerate up to 5 days. To refresh, warm briefly in a hot oven (350°F / 175°C for 5–7 minutes) or steam over simmering water for 30–60 seconds.

Freeze: Stack cooled pitas with parchment between them, place in a freezer bag, and freeze up to 3 months. Thaw at room temperature and warm in a hot skillet or oven before serving.
