Rice and Vermicelli

Rinse the rice

Place the rice in a fine-mesh sieve or bowl and rinse under cold running water until the water runs mostly clear (about 2–3 minutes). Drain well.

Toast the vermicelli

Heat a large, heavy-bottomed saucepan over medium heat. Add 1 tablespoon butter and 1 tablespoon olive oil. When the butter is melted and the pan is hot, add the broken vermicelli. Stir constantly for 2–4 minutes until the vermicelli turns a deep golden brown but not burned. Remove the toasted vermicelli to a small bowl and set aside.

Sauté aromatics

In the same saucepan over medium heat, add the remaining 1 tablespoon butter. Add the chopped onion and sauté for 3–4 minutes until softened and translucent. Add the minced garlic and cook 30–45 seconds until fragrant, stirring to avoid browning.

Combine rice and vermicelli

Add the rinsed and drained rice to the saucepan with the onions and garlic. Stir for 1–2 minutes to coat the rice in the fat and heat through. Return the toasted vermicelli to the pan and stir to combine.

Add liquid and simmer

Pour in 2.5 cups of water or broth and add 1 teaspoon salt. Stir once to distribute ingredients, bring the mixture to a gentle boil over medium-high heat.

Cook covered

Once boiling, reduce heat to low, cover the pan tightly, and simmer without lifting the lid for 15 minutes (for long-grain white rice). After 15 minutes, turn off heat and let the rice steam, still covered, for an additional 10 minutes.

Fluff and finish

Remove the lid. Use a fork to gently fluff the rice and vermicelli, separating grains. Taste and adjust seasoning with additional salt if needed.

Aromatics & Finishing

Stir in optional finishing ingredients: add 2 tablespoons chopped fresh parsley, 1 teaspoon lemon juice, and 1/4 teaspoon freshly ground black pepper. Gently fold to distribute. If desired, drizzle a little extra olive oil (1 teaspoon) or a small knob of butter for sheen and richness.

Serve warm as a side or base for stews, grilled meats, or vegetables.
