Prep aromatics

Peel and finely mince the garlic clove. Finely mince the shallot so it yields about 1 tablespoon. Place both in a small bowl.

Combine base ingredients

In a medium bowl or a jar with a tight lid, add 3/4 cup pomegranate molasses, 1/4 cup fresh pomegranate juice, and 2 tablespoons red wine vinegar.

Add emulsifiers and seasoning

To the bowl or jar add 1 teaspoon Dijon mustard, 1 teaspoon honey, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Stir or whisk briefly to dissolve the mustard and honey into the acidic base.

Incorporate oil

Slowly pour in 1/2 cup extra-virgin olive oil while whisking vigorously to emulsify and create a glossy dressing. If using a jar, add the oil, seal, and shake vigorously for 20–30 seconds until fully emulsified.

Adjust balance

Taste the dressing and adjust sweetness, acidity, and salt as needed: add the optional 1 teaspoon fresh lemon juice for brightness, 1/2–1 teaspoon more honey if too tart, or a pinch more salt. If the vinaigrette is too thick, whisk in up to 1 tablespoon water or additional pomegranate juice to reach desired pourable consistency.

Finish

Stir in the minced garlic and shallot. Let the vinaigrette rest for at least 10 minutes at room temperature (or chill up to 2 hours) to allow flavors to meld. Shake or whisk again before serving.

Optional finishing

Just before serving, stir in 2 tablespoons fresh pomegranate seeds and 1 tablespoon chopped fresh mint or parsley for texture and freshness. Use the vinaigrette to dress salads, roasted vegetables, grilled meats, or as a drizzle for grain bowls.

Store any leftover vinaigrette in an airtight jar in the refrigerator for up to 7–10 days. Bring to room temperature and shake well before using; re-emulsify with a quick whisk if separation occurs.
