If using store-bought pita, warm them before serving: wrap in foil and heat in a 350°F (175°C) oven for 8–10 minutes or microwave covered for 30–45 seconds. Keep wrapped to stay soft until assembly.

Chicken Shawarma

Marinate

Whisk together Greek yogurt, olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, allspice, cinnamon, kosher salt and black pepper in a large bowl. Add chicken thighs, coat thoroughly, cover, and refrigerate at least 2 hours or preferably overnight for best flavor.

Cook

Preheat oven to 425°F (220°C). Spread marinated chicken on a rimmed baking sheet or cast-iron skillet in a single layer. Roast 18–25 minutes until internal temperature reaches 165°F (74°C) and edges are golden. For charred edges, broil 1–2 minutes, watching closely. Let rest 5 minutes, then thinly slice or shred.

Braised Beef Shawarma

Sear

Season beef pieces with salt and pepper. Heat 2 tbsp olive oil in a heavy Dutch oven over medium-high heat. Sear beef in batches until browned on all sides, transfer to a plate.

Braise

Reduce heat to medium, add sliced onion and cook until softened, 6–8 minutes. Add garlic and cook 1 minute. Stir in tomato paste, cumin, coriander, paprika and allspice and cook 1–2 minutes to bloom spices. Return beef to pot, add bay leaves and stock, bring to a simmer. Cover and transfer to a 300°F (150°C) oven for 2.5–3 hours until very tender (or simmer gently on stovetop). Remove bay leaves, shred beef with forks and skim excess fat. Adjust seasoning with salt and pepper.

Finish

Optionally reduce braising liquid on stove to a thick sauce and toss shredded beef in it for moist, flavorful filling.

Falafel

Prepare Mixture

Place drained soaked chickpeas, chopped onion, garlic, parsley, cilantro, cumin, coriander, baking powder, flour, salt and pepper in a food processor. Pulse until coarsely ground and just combined — mixture should hold together when pressed but not be a smooth paste. Transfer to a bowl, cover and chill 30 minutes.

Form & Fry

Heat vegetable oil in a heavy skillet or pot to 350°F (175°C). Form mixture into small patties or balls (about 1.5 inches) and fry in batches until deep golden brown, 3–4 minutes per side. Drain on paper towels and keep warm in a low oven if making ahead.

Prepare and plate toppings: dice tomatoes and cucumber, thinly slice red onion, chop parsley, and drain pickles. Whisk tahini or thin with water/lemon if too thick. If offering both tahini and garlic sauce, place in squeeze bottles or serving bowls for easy assembly.

Assembly & Service (Catering)

For catering service, arrange warmed pita pockets open-side up on a tray. Provide three labeled protein stations (Chicken Shawarma, Braised Beef, Falafel). Place corresponding protein warmers or covered pans nearby so guests or servers can stuff pitas to order.

To assemble a single pita: open pocket, drizzle 1–2 tbsp tahini and 1 tbsp garlic sauce (adjust to taste). Add 3–4 oz sliced chicken or 3–4 oz shredded braised beef or 2–3 falafel balls. Top with 1/4–1/2 cup shredded lettuce, 2 tbsp diced tomato, 2 tbsp diced cucumber, a few pickled slices, some red onion, and chopped parsley. Finish with a squeeze of lemon and a drizzle of olive oil or hot sauce if desired.

Portioning: estimate ~4–5 oz cooked protein per pita for generous catering portions (or 3–4 oz for lighter portions). This recipe yields about 12 pitas depending on fill; scale proteins and toppings proportionally for larger events.

To Finish / Storage

Keep sauces chilled and proteins hot until service. Assemble to order for best texture; if you must premake, place protein and sauces inside pita but keep crunchy toppings (lettuce, onions, pickles) separate to preserve texture. Leftover cooked proteins refrigerate up to 3–4 days; falafel is best reheated in a hot oven to regain crispness.
