Prepare the cauliflower

Trim the cauliflower: remove outer leaves and core. Cut the head into even florets about 1 to 1.5 inches in size so they cook uniformly. Rinse under cold water and pat dry with a kitchen towel or paper towels. Drying helps the marinade adhere and promotes browning.

Make the marinade

In a medium bowl, combine 3 tbs extra-virgin olive oil, 2 tbs fresh lemon juice, 1 tbs soy sauce or tamari, and 1 tsp maple syrup or agave. Mince or crush 3 garlic cloves and add to the bowl. Add 1 tsp smoked paprika, 1 tsp ground cumin, 1 tsp dried oregano, 1/2 tsp ground coriander, 1/4 tsp red pepper flakes, 1 tsp sea salt, and 1/2 tsp black pepper. Whisk thoroughly until emulsified. Taste and adjust seasoning — add a pinch more salt or lemon if desired.

Marinate the florets

Place the dried cauliflower florets in a large bowl or a zip-top bag. Pour the marinade over the florets and toss thoroughly with a spatula or by massaging the bag so every piece is coated. Let the cauliflower marinate at room temperature for 20–30 minutes, or refrigerate for up to 2 hours for a deeper flavor. If refrigerated, bring to room temperature for 15 minutes before cooking.

Preheat the oven to 220°C (425°F). Arrange marinated florets in a single layer on a rimmed baking sheet lined with parchment, leaving small gaps between pieces for browning. Roast for 20–25 minutes, turning once halfway through, until edges are golden and tender when pierced with a fork. For extra char, broil for 1–2 minutes at the end, watching closely to avoid burning.

Pan-searing option (quicker)

Heat a large skillet over medium-high heat and add 1 tbs olive oil. When shimmering, add marinated florets in a single layer (cook in batches if needed). Sear without moving for 3–4 minutes to develop color, then stir and continue cooking 6–8 minutes until fork-tender and evenly browned. Lower heat if spices begin to darken too quickly.

Finish and serve

Transfer cooked cauliflower to a serving bowl. Finely chop 2 tbs fresh parsley and 1 tbs fresh cilantro (if using) and sprinkle over the warm cauliflower. Optionally squeeze a little extra lemon juice (about 1 tsp) and drizzle 1 tsp olive oil. Taste and adjust salt or pepper. Serve warm as a side, salad topper, or plant-based main with grains or flatbread.

Storage and reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 200°C (400°F) oven for 8–10 minutes or in a skillet over medium heat until warmed and re-crisped. Avoid microwaving if you want to retain crispness.
