Prepare Rice Noodles

Soak the rice noodles in warm water for about 20-30 minutes until softened. Drain and set aside.

Chop Vegetables

Slice the bok choy into strips, julienne the carrot, and chop the broccoli into small florets.

Prepare Side Salad

In a large bowl, combine mixed greens, sliced cucumber, and halved cherry tomatoes. Drizzle with olive oil and balsamic vinegar, and toss to coat.

Cook Scallops and Shrimp

In a large skillet or wok, heat sesame oil over medium-high heat. Add scallops and shrimp, cooking for about 3-4 minutes until they are opaque and cooked through. Remove from the pan and set aside.

Stir-Fry Vegetables

In the same skillet, add bok choy, carrot, and broccoli. Stir-fry for about 3-4 minutes until vegetables are tender but still crisp.

Combine Ingredients

Add the soaked rice noodles, cooked scallops, shrimp, and lump crab meat to the skillet with vegetables. Stir well.

Add Sauce

In a small bowl, mix soy sauce, fish sauce, brown sugar, lime juice, and chili paste. Pour the sauce over the noodle mixture and toss everything together to combine. Cook for another 2-3 minutes until heated through.
