Method

Preparation

1

Preheat Oven

Preheat your oven to 425°F (220°C).

2

Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust them lightly with flour. Tap out any excess flour and set aside.

Making the Cake Batter

3

Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.

4

Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, whole eggs, egg yolks, and vanilla extract until well combined and slightly thickened.

5

Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly to prevent cooking the eggs.

6

Add Dry Ingredients

Sift in the all-purpose flour and add a pinch of salt. Gently fold the mixture until just combined; do not overmix.

Baking

7

Pour Batter into Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

8

Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

9

Cool Slightly

Remove from the oven and let the cakes cool in the ramekins for 1 minute.

10

Invert and Serve

Carefully invert each ramekin onto a plate. Tap the bottom gently to release the cake. Dust with powdered sugar and serve with a scoop of vanilla ice cream and fresh berries.
