Method
Prepare Calamari
Clean the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.
Mix the Coating
In a bowl, combine all-purpose flour, cornstarch, salt, and black pepper. Mix well.
Coat the Calamari
Dip the calamari rings in the water and then coat them in the flour mixture until evenly covered.
Fry the Calamari
Heat the Oil
In a deep skillet or frying pan, heat 2 cups of vegetable oil over medium-high heat until hot.
Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Heat the Oil for Basil
In a separate small pan, heat 0.5 cups of vegetable oil over medium heat.
Fry the Basil
Add the fresh basil leaves to the hot oil and fry for about 30 seconds until crispy. Remove and drain on paper towels.
Prepare the Vegetable Garnish
Serve
Plate the Dish
On a serving platter, arrange the fried calamari, crispy basil, and the sliced vegetables.
Add Sweet Chili Sauce
Drizzle sweet chili sauce over the calamari or serve it on the side for dipping.
