Make the Filling

In a large skillet, melt the butter over medium heat. Add the shallots and garlic, and sauté until soft and fragrant, about 2-3 minutes.

Stir in the flour and cook for another minute, stirring constantly.

Gradually add the seafood stock and heavy cream, whisking until smooth. Bring to a simmer and cook until thickened, about 5-7 minutes.

Fold in the shrimp, scallops, fish, peas, dill, salt, and black pepper. Remove from heat and let cool slightly.

Assemble the Pie

Preheat the oven to 400°F (200°C). Roll out the pie crust and fit it into a pie dish.

Pour the seafood filling into the pie crust and cover with a top crust. Seal the edges and make slits for steam to escape.

Brush the top crust with an egg wash (1 egg beaten with 1 tbs water) if desired.

Bake

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.

Let cool for a few minutes before serving.
