Warm milk and cream
In a medium saucepan, combine 2 cups whole milk and 1 cup heavy cream. Split the vanilla bean lengthwise and scrape the seeds into the milk (or add 1 tablespoon pure vanilla extract). Add 1 tablespoon granulated sugar. Heat the mixture over medium heat until it just begins to steam and small bubbles form around the edge (do not boil), about 5–7 minutes. Remove from heat and let steep 10 minutes if using vanilla bean, then rewarm gently.
Tempered egg yolks
While the milk is warming, whisk 4 large egg yolks with 1 teaspoon fine sea salt in a medium bowl until smooth and slightly thickened. Slowly ladle about 1/2 cup of the hot milk mixture into the yolks in a steady stream while whisking constantly to temper them (prevents scrambling). Continue adding hot milk in two more additions until roughly 1 1/2 cups has been incorporated and the yolks are warmed.
Cook the custard
Return the tempered yolk mixture to the saucepan with the remaining milk. Cook over low to medium-low heat, stirring constantly with a wooden spoon or heatproof spatula and scraping the bottom, until the custard thickens enough to coat the back of the spoon and reach about 170–175°F (if using a thermometer), about 4–6 minutes. Do not let it boil or the eggs will curdle.
Strain and cool
Immediately pour the custard through a fine-mesh sieve into a clean bowl to remove any cooked bits and vanilla pod pieces. Stir gently to release steam, then press plastic wrap directly onto the surface to prevent a skin from forming. Chill in the refrigerator until cold, at least 2 hours (can be made up to 24 hours ahead).
Place 8 Oreos (whole, with filling) in a food processor and pulse until you have coarse to fine crumbs depending on texture desired. If you don't have a food processor, place cookies in a sealed bag and crush with a rolling pin. For a firmer crumb garnish, optionally mix the crumbs with 1 tablespoon melted unsalted butter and chill briefly to set.
Set aside 2 Oreo halves or a tablespoon of larger crumbs for final garnish. Keep remaining crumbs in the refrigerator until assembly to preserve texture.
Dark Chocolate Sauce
Make ganache-style sauce
Place 4 oz finely chopped bittersweet/dark chocolate in a heatproof bowl. Heat 1 tablespoon heavy cream just to a simmer (do not boil) and pour it over the chopped chocolate. Add 1 teaspoon light corn syrup and 1/4 teaspoon fine sea salt. Let sit 1 minute, then whisk until smooth and glossy. If too thick, stir in up to 1 teaspoon warm milk to reach a pourable consistency. Keep warm or reheat gently before assembly.
Finishing / Assembly
Assemble dessert
Spoon or pipe chilled vanilla custard into serving glasses or bowls, filling them about two-thirds full. Sprinkle a generous layer (about 2–3 tablespoons) of Oreo crumbs over the custard in each serving. Drizzle 1–2 tablespoons of the warm dark chocolate sauce over the crumbs and custard. Top with reserved Oreo halves or larger crumbs for garnish.
Serve
Serve immediately if you want the sauce warm and crumbs crunchy. If assembled ahead, keep chilled and add the warm chocolate just before serving so crumbs remain crisp. Makes 4 servings.
