Prep
Remove hot dogs from refrigerator 10–15 minutes before cooking to take the chill off for even cooking. Split the potato rolls along the top seam if they are pre-split; if not, cut carefully to create a hinge, leaving one side attached.
Pan-Toast Rolls
In a large skillet over medium-low heat, melt 2 tablespoons unsalted butter with 1 teaspoon vegetable oil (oil helps prevent butter from burning). Once butter is foamy and sizzling gently, place rolls cut-side down in the skillet, pressing lightly so the interior toasts evenly. Toast for about 1–2 minutes until golden-brown and fragrant. Remove rolls to a plate and keep warm.
Cook Hot Dogs — Option A: Pan-Sear (recommended for natural casing)
Raise skillet heat to medium-high and add the hot dogs directly (do not add more fat). Cook the natural-casing beef dogs, rolling them frequently so all sides brown and casings blister, about 6–8 minutes total. Use tongs to turn so the casing chars slightly in places without burning. Internal temperature should be 160°F (71°C) if measured.
Cook Hot Dogs — Option B: Gentle Simmer then Sear (alternative)
Place hot dogs in a saucepan with enough water to cover and bring to a simmer over medium heat. Simmer 3–4 minutes to heat through, then remove to a skillet and sear over medium-high for 1–2 minutes per side until casing tightens and charrs lightly.
Optional Toppings
Pickles: Lay 2–3 lengthwise pickle slices on the roll before adding the hot dog for crunch and acidity.
