Preparation and Cooking

Slice the Potatoes

Wash and peel the Russet potatoes. Using a mandoline or a sharp knife, slice the potatoes thinly (about 1/8 inch thick).

Soak the Potatoes

Place the sliced potatoes in a bowl of cold water and let them soak for about 30 minutes. This helps to remove excess starch.

Prepare the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips

Carefully add a handful of potato slices to the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still warm.

Make the Ranch Dressing

In a medium bowl, combine mayonnaise, sour cream, buttermilk, dill weed, garlic powder, onion powder, salt, and black pepper. Whisk until smooth and well combined.

Serve the crispy potato chips warm with the ranch dressing on the side for dipping.
