Method
Cooking the Pork Chop
Prepare the Pork Chop
Season the bone-in pork chop with salt and black pepper on both sides.
Sear the Pork Chop
In a large skillet, heat olive oil over medium-high heat. Add the pork chop and sear for about 4-5 minutes on each side, until a nice brown crust forms and the internal temperature reaches 145°F (63°C). Remove from skillet and let it rest.
Making the Sour Cherry Mostarda
Combine Ingredients
In a small saucepan, combine sour cherries, sugar, white wine vinegar, Dijon mustard, ground cinnamon, and ground cloves.
Cook the Mostarda
Bring the mixture to a simmer over medium heat. Cook for about 10-15 minutes until the cherries are softened and the sauce thickens. Remove from heat and let cool slightly.
Cooking the Lemon Herb Fingerling Potatoes
Prepare the Potatoes
Wash the fingerling potatoes and cut them in half lengthwise.
Season the Potatoes
Add lemon zest, lemon juice, chopped parsley, olive oil, salt, and black pepper to the potatoes. Toss to combine.
