Preparation
Make the Dough
In a large bowl, combine the flour, salt, yeast, and water. Mix until a dough forms.
Knead the Dough
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.
Preheat the Oven
Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside.
Shape the Pizza
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.
Add Toppings
Spread the mole sauce over the dough, then add pulled chicken, pickled red onion, and queso Oaxaca.
Bake the Pizza
Transfer the pizza to the preheated stone or baking sheet and bake for 12-15 minutes or until the crust is golden and the cheese is bubbly.
Serve
Remove the pizza from the oven, let it cool slightly, slice, and serve warm.
