Ravioli & Coating

Red Dipping Sauce

Heat a small saucepan over medium heat and add 1 tablespoon olive oil.

Add the finely chopped onion and sauté, stirring occasionally, until translucent and soft, about 4–5 minutes.

Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

Stir in the tomato paste and cook 30 seconds to concentrate flavor.

Add the crushed tomatoes, dried basil, dried oregano, salt, sugar (if using), black pepper and red pepper flakes (if using). Stir to combine.

Bring sauce to a gentle simmer, reduce heat to low, and simmer uncovered for 12–15 minutes to thicken slightly and meld flavors, stirring occasionally.

Taste and adjust seasoning. If sauce is too acidic, add a pinch more sugar. Remove from heat and stir in torn fresh basil leaves, if using. Keep warm while frying ravioli.

Ravioli & Coating

If using frozen ravioli, thaw in refrigerator overnight and pat dry with paper towels; if using fresh, pat dry. Ensure ravioli are dry to help the coating adhere and prevent oil splatter.

Set up a breading station: in a shallow bowl or plate place the flour. In a second shallow bowl whisk together the 2 eggs and 2 tablespoons milk until smooth. In a third shallow bowl combine breadcrumbs, 1/4 cup grated Parmesan, Italian seasoning, garlic powder, 1/2 tsp salt and 1/4 tsp black pepper; mix well.

Working in batches of 6–8, dredge each ravioli first in flour, shaking off excess, then dip into the egg wash, letting excess drip off, and finally press into the breadcrumb mixture to coat thoroughly. Place coated ravioli on a sheet tray or plate and let sit 5 minutes to set the coating.

Pour 1 cup vegetable oil into a heavy skillet (cast-iron or stainless) to reach about 1/4–1/3 inch depth. Heat over medium-high until oil reaches 350°F (175°C) or a breadcrumb dropped in sizzles and browns in about 30–45 seconds.

Fry ravioli in a single layer in batches (do not overcrowd) for about 1.5–2 minutes per side, turning once with tongs, until golden brown and crisp. Internal filling should be hot; adjust time slightly based on ravioli thickness.

Use a slotted spatula to transfer fried ravioli to a wire rack set over a sheet tray or paper towels to drain. Lightly season with a pinch of salt while hot. Repeat with remaining ravioli, bringing oil back to temperature between batches.

If you prefer a crunchier, double-coated ravioli: after first breadcrumb coat, return to egg wash briefly and re-coat in breadcrumbs before frying. Reduce frying time by 15–20 seconds per side if needed to avoid over-browning.

Finish & Serve

Reheat the red sauce gently if needed. Spoon warmed sauce into a shallow serving bowl or individual dipping bowls.

Arrange fried ravioli on a platter around the sauce bowl or on a platter lined with paper towel for presentation.

Sprinkle 2 tablespoons grated Parmesan and chopped fresh parsley over the ravioli. Serve immediately with lemon wedges on the side (optional).

Provide small forks or toothpicks for guests to pick up ravioli and dip into the red sauce.
