Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear, about 3-4 minutes.

Cook the Rice
In a rice cooker or medium saucepan, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed.

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow the rice to cool to room temperature.
Prepare Tuna

Slice the Tuna
Using a sharp knife, slice the tuna into thin pieces, about 1/4 inch thick. Ensure your knife is wet to avoid sticking.

Drizzle the sesame oil over the tuna slices and sprinkle with sea salt and black sesame seeds. Let it marinate for about 5 minutes.
Assemble Nigiri

Wet your hands to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape, pressing gently but firmly.

Place one slice of the marinated tuna on top of the shaped rice. If desired, add a small dab of wasabi under the tuna.
