Cook the sausage
Heat a large skillet over medium heat and add 1 tablespoon olive oil. Add the sausage (casings removed) and break into bite-size pieces with a spatula. Cook 6–8 minutes, stirring occasionally, until browned and cooked through. Use a slotted spoon to transfer cooked sausage to a plate and set aside, leaving any rendered fat in the pan.
Sauté garlic and finish sauce
If the pan is dry, add the remaining 1 tablespoon olive oil. Add the minced garlic and sauté 30–45 seconds until fragrant (do not brown). Pour in 2 cups marinara sauce, add dried oregano, salt, black pepper, and red pepper flakes. Stir to combine and bring to a gentle simmer. Return the cooked sausage to the sauce, stir, and simmer 4–5 minutes so flavors meld. Taste and adjust seasoning.
Bread & Assembly
Prepare rolls
Preheat the oven to 425°F (220°C) or set a broiler to medium-high. Slice each roll lengthwise, leaving a small hinge if desired. Spread about 1/2 tablespoon softened butter on the cut sides of each roll.
Fill the subs
Place the rolls open-faced on a baking sheet, buttered sides up. Spoon an even amount of the sausage-and-marinara mixture into each roll (about 1/2 cup per roll). Top each with roughly 2 ounces shredded or sliced mozzarella and a generous sprinkle of grated Parmesan (about 2 tablespoons per sandwich).
Toast and melt cheese
Bake in the preheated oven for 6–8 minutes, or place under the broiler 2–4 minutes, until the cheese is fully melted and edges of the roll are toasted. Watch closely under the broiler to avoid burning.
Finishing & Garnish
Remove the subs from the oven. If using, tuck torn basil leaves and sprinkle chopped parsley over the hot sandwiches. Let the subs rest 1 minute, then serve hot.
