Prepare cheese
Cut the block(s) of firm melting cheese into 1-inch by 3-inch sticks (about 12 pieces). Pat each piece dry with paper towels to remove surface moisture. Place the sticks on a parchment-lined tray and freeze for 20–30 minutes; this helps prevent melting during frying.
Set up breading stations
In a shallow bowl or plate, combine 1 cup flour with 1/2 teaspoon salt, 1/4 teaspoon black pepper and 1/4 teaspoon garlic powder; mix and label 'flour.' In a second shallow bowl, beat the 2 eggs with 2 tablespoons cold water or milk until smooth and slightly frothy; label 'egg wash.' In a third shallow bowl, combine 1.5 cups panko (or plain breadcrumbs) with 1/2 cup fine breadcrumbs (if using) and 1/4 teaspoon salt, 1/4 teaspoon black pepper; mix and label 'crumbs.' Place 1/4 cup flour on a small plate for an initial dusting step.
Dredge cheese
Working with a few pieces at a time, lightly dust each chilled cheese stick in the small plate of flour, shaking off excess. Dip into the seasoned flour mixture briefly, then into the egg wash ensuring full coverage, and finally press firmly into the breadcrumb mixture so crumbs adhere on all sides. For extra insurance against leaks, return the crumbed sticks to the egg wash briefly and re-coat in breadcrumbs (double-coating). Place breaded sticks on a tray and freeze for another 15–20 minutes to firm the coating.
Heat oil
Pour about 2 to 3 cups oil into a deep, heavy-bottomed skillet or a wide saucepan to a depth of about 1.5 inches (enough to partially submerge sticks). Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread into the oil — it should sizzle and brown slowly, not burn immediately.
Fry cheese sticks
Work in batches to avoid crowding (3–4 sticks per batch depending on pan size). Carefully lower the frozen, breaded cheese sticks into the hot oil using tongs. Fry for 1.5–2 minutes per side, turning once, until golden brown and crisp. Do not fry for too long — goal is golden exterior with melted interior. If oil temperature drops below 325°F, wait for it to recover to 350°F between batches.
Drain & finish
Using a slotted spoon or tongs, transfer the fried cheese sticks to a wire rack set over a baking sheet or to paper towels to drain. Immediately sprinkle with a light pinch of salt. Let rest 1–2 minutes before serving so cheese movement stabilizes but still hot and melty.
Dipping Sauce
Warm the marinara sauce in a small saucepan over low heat for 3–5 minutes, stirring occasionally. Stir in hot sauce if desired. Transfer to a small serving bowl alongside the fried cheese sticks.
