Slice the Eggplant

Wash and slice the eggplants into 1/4-inch thick rounds. Lay them on a paper towel and sprinkle with salt to draw out moisture. Let them sit for 30 minutes.

Prepare the Breading

Set up a breading station: Place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with black pepper in a third bowl.

Fry the Eggplant

After 30 minutes, rinse the eggplant slices and pat them dry. Heat olive oil in a frying pan over medium heat. Dredge each slice in flour, then dip in the egg, and finally coat in breadcrumbs. Fry until golden brown on both sides, about 3-4 minutes per side.

Layer the Ingredients

In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the fried eggplant slices, followed by a layer of marinara sauce, half of the mozzarella, and half of the Parmesan cheese. Repeat the layers with the remaining ingredients.

Bake the Dish

Preheat the oven to 375°F (190°C). Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

Let it Rest

Remove the eggplant parmesan from the oven and let it rest for 10 minutes before slicing and serving.
