Method

Cocktail

  1. 1

    Prepare glass

Chill an old-fashioned or rocks glass by filling it with ice and setting aside while you prepare the cocktail. Alternatively, place the glass in the freezer for 5–10 minutes.

  2. 2

    Mix ingredients

In a mixing glass or Boston shaker, add the aged rum (2 oz), sweet vermouth (1 oz), cherry liqueur or crème de cassis (0.5 oz), amaro (0.25 oz), fresh orange juice (0.25 oz), simple syrup (0.25 oz), and 2 dashes of Angostura bitters.

  3. 3

    Stir with ice

Fill the mixing glass with plenty of ice (about 1 cup). Stir the mixture briskly with a bar spoon for 20–30 seconds until well chilled and slightly diluted (about 15–20 full spoon turns).

  4. 4

    Prepare serving glass

Discard the ice from the chilled serving glass. Place a single large ice cube in the glass.

  5. 5

    Strain and garnish

Double-strain the chilled cocktail from the mixing glass into the serving glass over the large ice cube. Express an orange twist over the drink to release the oils, rub it around the rim, and drop it into the glass. Optionally, add a Luxardo cherry on a pick for additional aroma and visual appeal.

  6. 6

    Serve

Serve immediately. Sip slowly to appreciate the layered fruit, herbaceous vermouth, bitters and amaro notes balanced by the warm rum base.
