Method

Cocktail

  1. 1

    Prepare glass

Chill a coupe or Nick & Nora glass by filling it with ice water while you build the drink, or place it in the freezer for a few minutes.

  2. 2

    Combine ingredients

In a cocktail shaker, add aged rum (2 oz), sweet vermouth (1 oz), amaro (0.5 oz), fresh lemon juice (0.5 oz), orange curaçao (0.25 oz), simple syrup (0.25 oz), and 2 dashes of Angostura bitters.

  3. 3

    Add ice and shake

Fill the shaker with plenty of ice. Secure the lid and shake vigorously for 12–15 seconds, until the exterior of the shaker is very cold and slightly frosted.

  4. 4

    Strain

Discard the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pulp.

  5. 5

    Garnish

Express the oils from an orange peel over the surface of the drink by holding the peel skin-side down about 3–4 inches above the glass and giving it a firm squeeze to release the oils. Run the peel around the rim, then drop it into the cocktail as a garnish.

  6. 6

    Serve

Serve immediately while cold. Encourage the drinker to savor the layered bittersweet and citrus notes. Adjust sweetness in future batches by increasing or decreasing the simple syrup by 0.25 oz if desired.
