Chill glass
Place a coupe or rocks glass in the freezer or fill with ice water to chill while you assemble the cocktail.

Add 2 oz aged rum, 0.75 oz fresh lime juice, 0.5 oz fresh orange juice, 0.5 oz honey syrup, 0.5 oz amaro, 0.25 oz orange liqueur, and a pinch of salt into a cocktail shaker.

Add 2 dashes aromatic bitters to the shaker.

Fill the shaker with ice (about 1 cup or enough to three-quarters fill the shaker).

Secure the lid and shake vigorously for 12–15 seconds, until the outside of the shaker is well chilled and slightly frosted—this both chills and dilutes the drink to balance the honey and amaro.
Strain & Serve

Discard ice or water from the chilled glass. Double-strain the contents of the shaker into the chilled coupe or over fresh large ice in a rocks glass using a Hawthorne strainer and a fine mesh strainer to remove small ice chips and any pulp.

Express an orange twist over the cocktail: hold the twist skin-side down over the drink and give it a sharp bend to release oils, then rub the rim of the glass with the twist and drop it into the drink.

Garnish with a mint sprig if desired for an herbal aroma—slap it lightly between your palms first to awaken the oils.
