    Dry shake (if using egg white)

    If using the egg white, combine limoncello, aged dark rum, sweet vermouth, fresh lemon juice, simple syrup, orange curaçao, bitters, and the egg white in a cocktail shaker. Seal and dry-shake vigorously for 15 seconds (no ice) to emulsify and build foam.

    Add a generous handful of cubed ice to the shaker. Seal and shake vigorously for 12–18 seconds until the shaker is well chilled and the exterior is frosty.

    Double-strain the cocktail through a fine-mesh strainer into a chilled coupe or Nick & Nora glass (or over a large clear ice cube in a rocks glass), leaving behind any small ice shards and egg solids for a clean texture.

    Express the lemon twist over the drink (pinch the peel to release oils) and rim the glass lightly with the twist, then drop it in as garnish. If desired, grate a little lemon zest over the foam for additional aroma.
