Prepare and marinate

Pat the two chicken breasts dry with paper towels. If breasts are thick, butterfly or gently pound to an even thickness (~1/2 inch) so they cook evenly. In a bowl combine 2 tbs olive oil, 1 tsp smoked paprika, 1 tsp ground cumin, 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp salt, 1/2 tsp black pepper and 1 tbs lemon juice. Rub the spice mixture all over the chicken, coating evenly. Cover and refrigerate for at least 15 minutes (up to 2 hours) to let flavours develop.

Grill the chicken

Preheat a grill pan or outdoor grill to medium-high (about 200–220°C / 400–425°F). Brush the grates or pan with a little oil. Grill the chicken breasts 5–7 minutes per side (depending on thickness) until an internal temperature of 74°C / 165°F is reached and juices run clear. Avoid pressing down on the meat. Remove from heat and rest on a cutting board for 5 minutes before slicing into 1/2-inch strips or thin slices.

While the chicken rests, make the dressing. In a small bowl combine 1/2 cup plain Greek yoghurt, 2 tbs mayonnaise, 1 tsp lemon juice, 1/2 tsp minced garlic, 1/4 tsp smoked paprika, 1/2 tsp hot sauce (optional), 1/4 tsp salt and a pinch (1/8 tsp) black pepper. Whisk until smooth and adjust seasoning to taste. Chill briefly if desired.

Assemble Wraps

Warm the 2 flour wraps briefly in a dry skillet over medium heat or microwave for 10–15 seconds to make them pliable. Lay each wrap flat and spread about 1 tablespoon of the yoghurt mayo down the center of each wrap.

Place an even portion of shredded lettuce (about 1/2 cup per wrap) on top of the mayo. Add sliced grilled chicken (one breast worth split between two wraps, or both breasts in one wrap if you prefer a double portion) on top of the lettuce.

Drizzle or spoon 1 tablespoon chilli jam over the chicken on each wrap. Add optional sliced tomato and cucumber if using.

Fold the sides of the wrap in, then roll tightly from the bottom to enclose the filling. Cut each wrap in half on the bias if desired and serve immediately while chicken is warm.
