Method
Prepare the Station
Chill and assemble
Chill a large beverage dispenser, pitcher, or drink station in the refrigerator for at least 30 minutes. Ensure there is enough space for roughly 16 cups of liquid plus ice (a 3–4 quart dispenser works well). Place glasses, straws, and a small bowl of lime/lemon wheels and mint nearby.
Mix the Bottomless Coke
Pour 12 cups of well-chilled Diet Coke into the chilled pitcher or dispenser. If you prefer a slightly lighter carbonation or want to extend the volume without altering flavor too much, carefully add 2 cups of cold club soda or seltzer and stir gently once to combine. Avoid vigorous stirring to preserve carbonation.
Add 1/2 cup fresh lime juice and 1/4 cup fresh lemon juice to the mixture. These brighten the flavor and make the large-format drink taste fresh rather than flat.
If you want a touch more sweetness or to counteract extra acidity, stir in up to 2 tablespoons liquid sucralose or simple syrup. Taste and adjust — for a truly 'diet' option you may skip added sweetener.
If using, add Angostura bitters sparingly: 1–2 dashes per glass is typical. For a 12-cup batch, 12 teaspoons (equivalent to 24 dashes) is listed above as an optional guideline; instead add 6–12 dashes total, taste, and increase only if desired. Bitters add complexity but are entirely optional.
Serve
Ice the glasses
Fill each serving glass halfway with ice (about 1/2 cup ice per 12-oz glass). For a bottomless service, keep an ice bucket and extra ice nearby so servers or guests can top off glasses.
Store any leftover mixed beverage in the refrigerator and use within 24 hours for best carbonation and flavor. Do not freeze. If carbonation softens, top with additional chilled club soda when serving.
