Prepare Wings

Trim and dry

If your wings are whole and un-split, use a sharp knife to cut at the joint to separate drumette and flat or leave whole as preferred. Pat the 3 wings thoroughly dry with paper towels — removing surface moisture helps them brown and crisp on the grill.

Place the dried wings in a medium mixing bowl large enough to hold the wings and marinade.

Make Marinade / Rub & Marinate

Combine marinade

In a small bowl, whisk together 1 tbs olive oil, 1 tsp soy sauce, 1 tsp fresh lemon juice, 1 tsp smoked paprika, 1 tsp garlic powder, 0.5 tsp onion powder, 0.25 tsp black pepper, 0.5 tsp kosher salt, and 0.125 tsp cayenne (if using). Taste a tiny smear on a finger (optional) to check balance — adjust salt or lemon if needed.

Pour the marinade over the wings and toss thoroughly so each wing is evenly coated. Cover and refrigerate for at least 20 minutes and up to 4 hours. If short on time, let sit at room temperature for 15–20 minutes before grilling.

Grilling

Preheat grill

Preheat your grill to medium-high (about 400–450°F / 200–230°C). If using charcoal, set up for direct heat with a hot zone and allow coals to ash over.

Oil the grate

Before placing wings on the grill, oil the grill grate lightly (use tongs with a paper towel dipped in oil) to prevent sticking.

Grill the wings

Place the 3 wings on the hot grate directly over the heat. Grill for 4–5 minutes per side, turning once or twice, until skin is golden and crisp and internal temperature reaches 165°F (74°C). If flare-ups occur, move wings briefly to cooler part of grill then return. Total grilling time should be about 12–15 minutes depending on wing size and grill temperature.

Rest

Remove wings from the grill and transfer to a plate. Let rest 3–5 minutes — this allows juices to redistribute and the surface to firm slightly.

Finish & Serve

Squeeze the lemon wedge over the hot wings, sprinkle with chopped parsley if using, and serve immediately while hot and juicy. Provide extra lemon or your favourite dipping sauce on the side.
