Method
Prep
Trim and dry
Remove any excess fat or loose skin from the chicken quarter. Pat the skin and the cavity dry thoroughly with paper towels — dry skin crisps better when grilled.
Season lightly
Sprinkle the kosher salt and freshly ground black pepper evenly over both sides of the chicken, including under the skin where possible. Let rest at room temperature for 15–20 minutes if time allows (helps even cooking).
Make the Spice Rub
In a small bowl combine paprika, garlic powder, onion powder, ground cumin, ground coriander, brown sugar, cayenne pepper and dried oregano. Mix thoroughly so the sugar and spices are evenly distributed.
Add the olive oil and lemon juice to the spice mix and stir to form a loose paste — this helps the rub adhere to the chicken and promotes browning.
Apply Rub & Marinate
Gently loosen the skin from the breast/thigh by sliding your hand between skin and meat. Rub about two-thirds of the spice paste directly onto the meat under the skin, spreading it evenly. Rub the remaining paste on the outside of the skin, ensuring an even coating.
If you have 30 minutes to 2 hours, place the rubbed chicken in the refrigerator uncovered (or lightly covered) to let flavors penetrate and skin dry slightly. Remove from refrigerator 30 minutes before grilling to return to room temperature.
Grill (Flame-Grill)
Place the chicken skin-side down over direct heat for 3–5 minutes, watching closely to avoid flare-ups — the goal is to render fat and crisp the skin, not burn it. Move to indirect heat (or lower the flame) and continue cooking with the lid closed.
Cook until an instant-read thermometer inserted into the thickest part of the thigh (avoiding bone) reads 165°F (74°C). For a chicken quarter this typically takes 25–35 minutes total depending on grill temperature and piece size. Turn the chicken once or twice for even cooking.
If skin becomes too dark before the interior reaches temperature, move the chicken to indirect heat and close the lid to finish cooking gently.
Rest & Serve
Garnish with chopped fresh parsley if desired. Serve the quarter on the bone with any pan juices or a wedge of lemon on the side.
