Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them in a bowl with olive oil, salt, black pepper, and paprika. Spread them out on a baking sheet and roast in the oven for 25-30 minutes or until tender.
While the sweet potatoes are roasting, slice the halloumi cheese into thick pieces. Heat a non-stick skillet over medium heat and cook the halloumi slices for about 2-3 minutes on each side until golden brown and crispy.
Toast the whole grain bread or warm the wraps. Spread a layer of mashed avocado on each slice or wrap, then layer with roasted sweet potatoes, halloumi, and fresh spinach or arugula. Drizzle with lemon juice for added flavor.
