Prepare the Corn
Remove husks and silk from the corn on the cob. Rinse under cold water and set aside.

Make the Batter
In a large bowl, combine rice flour, cornstarch, baking powder, salt, black pepper, and water. Mix until a smooth batter forms.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Ensure there is enough oil to fully submerge the corn.

Batter the Corn
Dip each ear of corn into the batter, ensuring it's fully coated.

Fry the Corn
Carefully place the battered corn into the hot oil. Fry for about 5-7 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Sauce
In a bowl, mix together sour cream, mayonnaise, and chili powder. Adjust seasoning as needed.

Serve
Drizzle the creamy sauce over the fried corn. Garnish with fresh cilantro and serve with lime wedges on the side.
