Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine crushed Oreo cookies and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake in the preheated oven for 10 minutes, then remove and let cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add sour cream and vanilla extract, mixing until well combined. Add each egg one at a time, mixing on low speed until just incorporated.

Combine and bake
Pour the cheesecake filling over the cooled Oreo crust. Smooth the top with a spatula. Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill and serve
Once cooled, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, top with additional crushed Oreos if desired. Slice and enjoy!
