Prepare Collard Greens
In a pot, add a small amount of water and bring to a boil. Add chopped collard greens, cover, and steam for about 10 minutes until tender. Season with salt and pepper, then set aside.

Assemble Hood Rolls
Take an egg roll wrapper and place a spoonful of mac & cheese, a spoonful of collard greens, and a spoonful of mashed yams in the center. Fold the sides over and roll tightly. Seal the edges with a bit of water.

Fry the Rolls
In a deep frying pan, heat vegetable oil over medium-high heat. Fry the rolls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Serve
Serve hot with your favorite dipping sauce.
