Crust (Pâte Sucrée)
Cut in butter
Add 0.5 cups cold unsalted butter cubes to the dry mixture. Using a pastry cutter or your fingertips, rub the butter into the flour until the mixture resembles coarse sand with some pea-sized butter bits remaining.
Add egg yolk and water
Mix 1 egg yolk with 1 tablespoon cold water and add to the flour-butter mixture. Gently mix with a fork until dough starts to come together. If needed, add up to 1 additional teaspoon cold water, but do not overwork.
Chill and roll
Gather dough into a flattened disk, wrap tightly in plastic wrap, and chill in the refrigerator for at least 30 minutes (up to 2 hours). This firms the butter and relaxes gluten for a tender crust.
Blind-bake shell
Heat oven to 350°F (175°C). On a lightly floured surface, roll chilled dough to about 1/8" (3 mm) thick and line a 9-inch (23 cm) tart pan with removable bottom, pressing into corners and trimming excess. Chill the lined pan for 15 minutes to prevent shrinkage. Line crust with parchment and fill with pie weights or dried beans. Bake for 18 minutes, remove weights and parchment, then bake 6–8 more minutes until edges are golden and base is set. Let cool slightly before filling. If top browns too quickly, cover edges with foil.
Hojicha Pastry Cream Filling (Crème Pâtissière)
Infuse milk with hojicha
In a medium saucepan, combine 2 cups whole milk, 0.25 cup heavy cream, and 2 tablespoons loose hojicha (or 2 tbsp hojicha powder). Warm over medium heat until just simmering (small bubbles around the edge), then remove from heat. Cover and let steep 10 minutes for loose leaves (5 minutes if using powder), pressing leaves with a spoon to extract flavor. Strain through a fine-mesh sieve into a clean saucepan, discarding leaves. If using powder, strain to remove any larger particles.
Whisk yolks and starch
While milk is steeping, whisk together 4 egg yolks and 0.5 cup granulated sugar in a bowl until pale and slightly thickened. Add 0.25 cup cornstarch and whisk until smooth and lump-free.
Temper eggs
Bring the strained hojicha milk back to a gentle simmer. Slowly pour about 1/3 of the hot milk into the yolk mixture in a steady stream, whisking constantly to temper. Continue adding another third, then pour the tempered yolk mixture back into the saucepan with the remaining hot milk, whisking continually.
Cook pastry cream
Return saucepan to medium heat and cook, whisking constantly, until mixture thickens and comes to a gentle boil (about 1–2 minutes after starting to thicken). Keep whisking for 30 seconds to ensure cornstarch is cooked. Remove from heat.
Finish and chill
Whisk in 2 tablespoons unsalted butter and 0.5 tsp vanilla extract until smooth and glossy. Transfer the hojicha pastry cream to a shallow bowl, cover surface directly with plastic wrap to prevent a skin, and refrigerate until completely cold (at least 2 hours). If cream is too thick after chilling, whisk briefly to smooth before using.
Optional: fold whipped cream
For a lighter filling, whip 0.5 cup lightly sweetened heavy cream to soft peaks and gently fold one-quarter to one-half into the chilled hojicha pastry cream to loosen texture, then fold into remaining if desired. This step is optional but recommended for a mousse-like filling.
Assembly & Finish
Fill tart shell
Once the tart shell is completely cool and the hojicha pastry cream is chilled and smoothed, spoon or pipe the cream into the shell. Use an offset spatula to smooth the top. Tap lightly to remove any air pockets.
Chill to set
Refrigerate the assembled tart for at least 1 hour to let the filling set and flavors meld.
Garnish and serve
Just before serving, optionally dot or pipe small rosettes of the lightly sweetened whipped cream around the tart edge or center. Sprinkle 2 tablespoons toasted sesame seeds or chopped toasted nuts over the top and dust lightly with 1 tsp powdered sugar if desired. Slice with a hot, dry knife for clean cuts.
